This, my friends, is a perfectly roasted marshmallow: golden and crispy on the outside, soft and gooey on the inside. There are those in my family who might favor the charred approach—stick the marshmallow into the flames, set it on fire, and then blow it out—but I think if you’re going to melt gelatinized sugar, you should do it with pride.
